a small CRUSH
For the first time, a small crushing operation was done here at the Vineyard. This was the de-stemming of the berries off the vine, and is considered part of the crushing process. The de-stemmed fruit was placed in vats in a newly constructed, specially insulated, air conditioned, sanitized holding room. There the product will be stirred three times a day and yeast, chemicals, and water will be added. This year a small amount of the harvest was processed here and most of the Capay Valley grapes are taken elsewhere for processing, but eventually the total operation will take place on site.
